SEED & BERRY GRANOLA

Crunchy granola made with oats, sunflower 

and pumpkin seeds, dried golden berries and coconut.

 

Hints of: maple syrup, golden berries, coconut

 

Pairs with: milk, yogurt, banana, ice cream, nectarine

 

Bakes into: Granola Muffin Topping · Granola Butter

Granola Muffin Topping

Makes enough topping for 12 muffins

1/4 cup Seed & Berry Granola

2 Tablespoons Demerara sugar

 

Remove golden berries from the granola (they will burn).

Lightly crush granola in a blender or spice grinder. 

In a small bowl, mix granola bits with Demerara sugar. 

Prepare muffin batter. Spoon batter into muffin tin and 

sprinkle topping mixture evenly over batter. 

May require an additional 5 minutes for muffins to fully bake.

Granola Butter

Makes about 2 cups

2 Tablespoons coconut oil

2-4 Tablespoons coconut sugar, to taste

3 cups Seed & Berry Granola

 

In a high-power blender combine ingredients and blend on high 

until smooth. Use as you would use any seed or nut butter, or cookie butter.

1-Minute Shortcut Fruit Crisp

Makes 2 servings

4 scoops of vanilla or coconut ice cream, or yogurt

4 spoonfuls of your favorite jam

2/3 cup Seed & Berry Granola

 

Divide ice cream or yogurt between two bowls. Top with jam and granola.

5-Minute Shortcut Fruit Crisp

Makes 2 servings

1 apple

1/4 cup water

4 scoops of vanilla or coconut ice cream, or yogurt

4 spoonfuls of your favorite jam

2/3 cup Seed & Berry Granola

 

Peel and core apple and slice into small pieces. In a small saucepan, 

bring apples and water to a boil. Covered with a lid and turn down to low.

Cook for five minutes until soft. To cook in the microwave, add water and 

apples to a microwave-safe dish and microwave on high for 2-4 minutes. 

Drain and divide the cooked apples between two bowls to cool slightly. 

Top with jam and granola. Add a scoop of ice cream or yogurt.
