FERMENTATION

At Lucky Star, we use very little yeast

in our bread. Instead, we ferment our dough for 12 -18 hours. This allows the development and growth of naturally forming yeast that, essentially, ‘digests’ the flour. The result is bread that has already done some of the work of digesting for you, leaving you with a happy tummy.
